Apple Cinnamon Cookies (paleo, GF, DF)

This morning has been a whirlwind in the kitchen. It’s the only way I cook. I’ll go for days without providing anything cooked or prepared for my family, then get into a frenzy and make 100 things at once. Guidelines for a healthy life.

Discipline is the word for the season. For me anyway. I feel like it’s time to get some things in place that will set me up for having more energy, life and happiness, and less lethargy and crankiness. Perfect Paleo Pancakes.

I’ve tried many a pancake recipe, and had many a pancake fail. In the midst of this journey, I tried cooking pancakes for house guests one time, and as I offered them, I was given a far too honest response… “Ah no thanks, they’re burnt.” Epic fail. So even more determined to get a good recipe to use frequently, I soldiered on, and have now perfected it.  (more…)
