Perfect Paleo Pancakes.

I’ve tried many a pancake recipe, and had many a pancake fail. In the midst of this journey, I tried cooking pancakes for house guests one time, and as I offered them, I was given a far too honest response… “Ah no thanks, they’re burnt.” Epic fail. So even more determined to get a good recipe to use frequently, I soldiered on, and have now perfected it. 

I know there are loads of paleo pancake recipes out there, but I really think this is worth sharing. These pancakes are fluffy, filling, healthy, easy and yummo.  I don’t know how much your family eats, so I won’t tell you how many serves it is. This recipe makes about 6 – 8. I often double the recipe and make extra to keep cold for snacks.

Perfect Paleo Pancakes

Pancake 2

1 ripe banana
2 eggs
1/4 c linseed meal (gives a nice wholemeal kinda texture)
1/4 c almond meal
1/4 c arrowroot or tapioca
2 tbsp coconut flour
2 tbsp coconut sugar or honey
1 tsp baking soda
Splash of vanilla, cinnamon, mixed spice and/or ginger

Just chuck this all in a bowl, and beat with the electric beater until batter forms. Heat a pan low and slow to prevent burning, and cook as you would another type of pancake. when it gets a few bubbles on top, flip it over. They take a bit longer, because they are dense with good stuff. Nice with butter and jam, fruit, syrup, whatever you damn well please!

By the way, in case you were wondering, this is what happens when your husband puts almond milk in your long black coffee while you’re outside taking photos of pancakes. I did still drink it. I just needed to stir it every few seconds, and try no to think about miso soup.

  2. Definitely trying these. p.s. I drink black coffee too, but on Saturday n Sunday my first cup has Silk’s dark chocolate almond milk.

  3. These are absolutely what the title says, perfect paleo pancakes!! They are so light and fluffy and quite easy to flip. These are hands down the BEST paleo pancakes ever. I was really missing soft fluffy pancakes, now when I get my (pretty regular) craving, I am satisfied

  4. Flaxseed also goes by the common name of linseed. Flaxseed meal and linseed meal are the same substance – the only difference is in the name.
    I will try this , i make some similar and crumble 😦 but i make my own cashew , tapioca, egg ans coconut milk and is soft and fluffy.
