This morning has been a whirlwind in the kitchen. It’s the only way I cook. I’ll go for days without providing anything cooked or prepared for my family, then get into a frenzy and make 100 things at once. Because if you’re cooking something, you may as well cook something else at the same time.
I’ve been finding that my early morning rises (all 2 of them) have made me a bit more productive. Today the fruits of my labour have been bulk bolognese sauce for some friends who need some extra help, paleo protein balls so my husband has something to snack on, a spinach quiche thing, and these yuuummmmy Apple Cinnamon Cookies. Plus feeding, dressing and laughing with the two cutest children in the entire world….while hubby has a sleep in! If you need to become superwoman, get up and go for a walk before everyone gets up. It’s seriously good.
This recipe makes about 16. But you know, if you make them bigger, it might only make 12.
Paleo Apple Cinnamon Cookies
2 medium apples grated
1 1/2 c almond meal
2 tbsp coconut flour
1/2 c sultanas
1/2 c dessicated coconut
1/4 c honey
1/2 c coconut oil
3 eggs
vanilla
cinnamon
OK, heres the really tricky part. Put it all in a bowl and mix it together! Woah. Now roll into balls, press onto a tray, and cook for around 20mins at 180 degrees. These are a bit like little cakes, and are particularly delicious warm with a cup of tea.
