Man, these things struggle to make a pile because I keep eating them! They’re delicious! Perfect for breakfast with some butter and honey and fruit, or savory wraps filled with chicken and salad or something yummy like that, these are such a good bread alternative. Probably the best thing is YOU CAN EAT BURRITOS AGAIN!!! Fill those suckers up with burrito mince, guacamole, cheese and sour cream if you’re into that kind of thing… I’ve tweaked this recipe to create the closest thing to a regular wrap as possible, and to make a fairly decent amount of them. I’m not going to lie, they taste a little omeletty, because they are predominantly egg. But I really love them as a preference to regular wheat or gluten free wraps. The other bonus is that they are really filling!
I’m not entirely sure how many this makes, because I’ve never actually made a whole batch without eating any. Oops! I’d say 8-10 depending on the size of your pan. Enjoy!
PALEO TORTILLA WRAPS
6 eggs
1 tblsp melted butter (or coconut oil)
3/4 c arrowroot or tapioca starch
3 tsp coconut flour
1/2 tsp baking soda
Pinch of salt
Beat ingredients altogether really well, and do a bit of whisking every time you pour a new one into the pan. Just pour a small amount of mixture and swirl it around to cover the base of the pan. Flip after a little while. They only need about 2 mins to cook!
