So, I quite often make pancakes for breakfast, but in this Brisbane heat, I really did not want to stand over the stove today. So I thought I’d make my Chocolate pancake mixture into a loaf! Then it’s kinda like chocolate cake for breakfast, and who says you can’t do that! Little S ran around with towel as a “Kate” (cape) while Miss 4 helped me put together:
2 ripe bananas
1/2 cup desiccated coconut
1 cup almond meal
1/3 cup of cocoa
Few tablespoons of brown sugar
Blend it all together with some beaters, chuck it in a loaf tin, cook for around 20 mins on 180 degrees and VIOLA! (Hehe) Chocolate banana loaf for breakfast.
We did also make fresh juice, with carrots, apples, ginger and nectarines for anyone who might be concerned for our health and wellbeing. 😜
