Hey guys, I’ve got another good one for you. It’s Saturday night, and you know, the party animal that I am, thought I’d do something wild and make brownies. And then I thought. What about brownies with caramel in them? And then I thought, oh man, how good is caramel and chocolate and salt?! And then this happened.
Brownie Mixture
1.5 C Almond meal
1/2 C tapioca starch
1/2 C brown sugar
125g butter
125g salted dark chocolate (I use Aldi brand Moser Roth, but you could use Lindt)
4 eggs
vanilla
Beat together eggs and sugar until a bit fluffy. Melt chocolate and butter together, pour into egg mix along with vanilla, and beat some more. Then add almond meal and tapioca and beat until well combined and thick.
Caramel
125g butter
3/4 C brown sugar
Melt these ones together over heat until they are smooth and like sauce.
OK, so pour half the brownie mixture into a 20cm x 30cm or similar slice tin. Then pour the caramel sauce over the top of that. Then pour/spread/whatever the other half of the brownie mixture over the top, and just make sure the caramel is mostly covered. If it gets a bit mixed up and dishevelled, don’t worry. It’s gonna taste amazing. THEN get the salt grinder and grind a light dusting of salt over the top. Trust me.
Cook for around 15-18 mins at 180 degrees celsius. (I like it crunchy-ish on top and a bit gooey in the middle)
Get those suckers out, chop them up, eat them warm with ice cream, or not with ice cream, and make your life better.
