So I’ve gotten into the bad habit of buying nut bars in a pack from the supermarket as an easy on-the-run snack. And lets face it, I probably still will at times, they are the least offensive of the snack bars in my opinion. But I thought I might at least try and make a healthier home made version. An dude, this is a winner!
NUT BARS
Into a food processor goes:
1 cup salted cashews
1/2 cup salted peanuts
(you don’t have to use salted stuff, you could salt your own or whatever)
1/2 cup almond butter
8 medjool dates
vanilla
1/3 c coconut oil
Blend well, then throw in handfuls of
sesame seeds,
sunflower seeds
cranberries
Just pulse a few times then press into tin to whatever thickness you like. Put it into the fridge to cool.
CHOC TOPPING
Blend together
1/2 coconut oil melted
3 tablespoons cocoa
1 tblsp honey
Once the bar slab is cooled, drizzle this all over the top in any fashion you like. Put it in the freezer if you’re like me and a bit impatient. Then cut into bars once its totally cool (like me).
They are a bit melty in this extreme Brisbane heat, so chomp on those suckers quick. YUM!
Wow…..how good is this, an Australian Pininterest site!!!!! Now I know what the ingredients are. Just a dumb question……the chocolate topping says 1/2 coconut oil melted. Is this 1/2 cup or tablespoon????

Hi Pauline, well, i used a couple of tablespoons initially but i think a decent amount of ‘chocolate’ would be better. You could just do a smaller amount if you just want a drizzle! 🙂
