Healthy Chocolate Pie – yes.

Ok. It’s time to get back into this blogging business. I’ve been putting off starting again for the new year. I don’t really know why. Many exciting things are happening, and on my mind, I’d like to share some of it with anyone who might listen/read, so stay tuned.

Food is always an easy one for me, so lets start with a delicious healthy recipe!

This is a sweet as treat for healthy…feet? dudes. I was hoping to come up with a witty rhyme there. Sorry!

But I tweaked a couple of things to suit me… As always, you should do the same.

Healthy Chocolate Pie

Base:
2 c pecans
3 tblsp coconut oil
Splashes of vanilla
1 c dates
About 1/2 c desiccated coconut
Blend this all in the food processor until its a bit sticky and clumpy and press into a pie dish. Put it in the freezer!
Don’t even worry about washing the processor bowl out…

Filling:
2 ripe avocados
3 bananas
Coconut oil
Vanilla
3/4 c cocoa
1/2 c rapadura sugar (optional for purist paleos)
3 tblsp honey (also optional)

Blend all this up in the food processor, and then put it in the pie! Soooo easy. I kept the pie in the freezer until serving time, and served it up with strawberries.

Looks amazing, tastes delish and is mega healthy!! Yeah!
